Similarly the quality of the first distillation is based upon the pomace that it is based upon. No matter how fine the first cut and second cut, if the original distillation is based upon bad pomace, the end result will still be bitter and stinky.
What is good pomace? It was discovered the fresher the pomace the better it is. (Fresh sludge is an odd concept to be sure.) This is because of oxidation. The Oxygen in the air immediately begins the attack and destruction of the finer elements of the grape as soon as it has been harvested and crushed. The wine maker is already part of the rush against oxidation - Attempting to crush, ferment, and strain the grapes as rapidly as is possible - In order that the resulting wine be stored in barrels away from the sun and air, a lethal combination for any organic thing. The wine maker quickly gets his fermented grape juice in barrels to be eventually bottled and corked to protect it from the oxygen of air. Then these bottles are stored away from sun in a cool dark place to protect them from environmental damage. As soon as the wine maker finishes extracting the wine from the mixture of skins, stems and seeds, the pomace is freshest. From this point the more sun and air that it is exposed to, the more it degenerates.
The elements primarily attack the flavors of the grape. Because all the flavor has been extracted from the grape to make the wine, the residual pomace only contains aromatics, but no taste.
